These Gluten-Free Churros are crisp on the outside, tender on the inside, and coated in a sweet cinnamon-sugar mix. Perfect for dipping in chocolate or caramel sauce, they’re a delicious gluten-free version of the classic Spanish treat.

- 1 cup water
- ½ cup unsalted butter (115 grams)
- 1 tablespoon granulated sugar
- 1 tablespoon light brown sugar, packed
- ¼ teaspoon salt
- 1 cup gluten-free flour blend (140 grams)
- 1 tablespoon cornstarch
- ¼ teaspoon xanthan gum (if not included in flour blend)
- ½ teaspoon vanilla extract
- 3 large eggs (room temperature)
For the Cinnamon-Sugar Coating:
- ½ cup granulated sugar (100 grams)
- 2 teaspoons ground cinnamon
Optional Add-Ons:
- Melted unsalted butter (for brushing before coating)
- Chocolate sauce or caramel sauce (for dipping)
Instructions
- Prepare the dough: In a saucepan over medium heat, combine water, butter, granulated sugar, brown sugar, and salt. Stir until the butter is melted and the mixture comes to a boil.
- Add dry ingredients: Remove from heat and stir in the gluten-free flour, cornstarch, and xanthan gum (if needed). Mix vigorously until a ball forms and pulls away from the sides of the pan.
- Cool slightly and add eggs: Let the dough cool for 5–7 minutes. Then beat in the vanilla extract and eggs, one at a time, mixing well after each addition until smooth and glossy.
- Heat oil: In a deep saucepan or fryer, heat oil to 350°F (175°C).
- Pipe the dough: Spoon the dough into a piping bag fitted with a large star tip. Pipe 4–6 inch strips directly into the hot oil, cutting with scissors.
- Fry: Fry in batches, turning occasionally, until golden brown (about 2–3 minutes per side). Remove with a slotted spoon and drain on paper towels.
- Coat: While still warm, brush churros lightly with melted butter (if using), then roll in the cinnamon-sugar mixture.
- Serve: Serve immediately with chocolate or caramel sauce for dipping.
Notes
- If your gluten-free flour blend contains xanthan gum, omit the added xanthan gum from the recipe.
- Letting the dough cool before adding eggs is important to avoid cooking them prematurely.
- Churros are best enjoyed fresh and warm!
