A delightful twist on a classic favorite, this Gluten-Free Cinnamon Roll Wreath combines fluffy bread with a sweet, cinnamon-spiced filling, perfect for gatherings or cozy brunches.

  • 4½ cups (680g) King Arthur Gluten-Free Bread Flour
  • ⅓ cup (65g) granulated sugar
  • 2¼ teaspoons instant yeast (1 packet)
  • 2 teaspoons kosher salt
  • 1 teaspoon baking powder
  • 1¼ cup (295ml) water (at room temperature)
  • 1 cup (236ml) whole milk (at room temperature)
  • 2 large eggs
  • 6 tablespoons (85g) melted butter
  • 1 cup (213g) brown sugar (optional)
  • 2 tablespoons ground cinnamon (optional)
  • 8 tablespoons (113g) melted butter (optional)
  • 1 cup (120g) powdered sugar (optional)
  • 12 tablespoons milk of choice (optional)
  • ¼ teaspoon vanilla extract (optional)

Instructions

  1. In a large bowl, combine the gluten-free bread flour, granulated sugar, instant yeast, kosher salt, and baking powder. Mix well.
  2. In a separate bowl, whisk together the warm water, whole milk, and melted butter. Add the eggs and mix until combined.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring to form a sticky dough. Cover and let rise for 30-45 minutes.
  4. In a small bowl, combine the brown sugar and ground cinnamon for the filling.
  5. Dust a clean surface with gluten-free flour and roll out the dough into a rectangle, about 15×10 inches and ½ inch thick.
  6. Brush rolled-out dough with melted butter and sprinkle with cinnamon-sugar mixture.
  7. Roll the dough into a log and slice into 12 equal pieces.
  8. Arrange 6 pieces on a lined baking sheet in a circle, then cut the remaining 6 in half and place them inside the outer ring.
  9. Cover and let rise for another 20-30 minutes. Preheat oven to 350°F (180°C).
  10. Bake for 25-30 minutes until golden brown. Let cool slightly.
  11. For the glaze, whisk together powdered sugar, milk, and vanilla until smooth, then drizzle over the wreath.
  12. Serve and enjoy!

Notes

For a dairy-free version, substitute whole milk with almond or oat milk, and use coconut or vegan butter. If short on time, consider using store-bought gluten-free cinnamon roll dough.
