These Gluten-Free Oh Henry! Bars are a homemade twist on the classic candy bar, combining a chewy oat base with a gooey caramel layer and a rich chocolate topping. Perfect for satisfying your sweet tooth without the gluten.

- 2 cups gluten-free quick oats
- 1 cup creamy peanut butter
- ½ cup honey or maple syrup
- ¼ cup unsalted butter or coconut oil
- ½ teaspoon vanilla extract
- 1 cup gluten-free soft caramels
- 2 tablespoons heavy cream or coconut milk
- 1 cup gluten-free semi-sweet chocolate chips
Instructions
- In a saucepan over medium heat, melt the butter or coconut oil with the peanut butter and honey or maple syrup until smooth.
- Remove from heat and stir in the vanilla extract.
- Mix in the gluten-free quick oats until well combined.
- Press the oat mixture evenly into the bottom of a greased 9×9-inch baking pan.
- In another saucepan, melt the gluten-free caramels with the heavy cream or coconut milk over low heat, stirring until smooth.
- Pour the caramel layer over the oat base and spread evenly.
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each, until smooth.
- Pour the melted chocolate over the caramel layer and spread evenly.
- Refrigerate the bars for at least 2 hours or until set. Cut into squares and serve.
