  • 1/8 teaspoon black pepper, or to taste
  • 14 oz grape or cherry tomatoes, halved
  • 1/2 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh Italian parsley leaves
  • 1/2 cup feta cheese, cubed
  • Optional: 1/4 cup toasted pine nuts or walnuts
  • Optional: 1/4 cup sliced Kalamata olives
  • Optional: 1/2 cup diced cucumber
  • Optional: 1/2 avocado, diced

Instructions

  1. Bring a large pot of salted water to a boil. Add green beans and cook for 2-3 minutes until crisp-tender. Immediately transfer to an ice bath to stop cooking, then drain and pat dry.
  2. In a small bowl, whisk together lemon juice, minced garlic, olive oil, oregano, salt, and pepper to make the dressing.
  3. In a large bowl, combine green beans, tomatoes, basil, parsley, and feta cheese.
  4. Drizzle the dressing over the salad and toss gently to coat.
  5. If desired, mix in optional ingredients like nuts, olives, cucumber, or avocado.
  6. Chill for 10–15 minutes before serving to allow flavors to meld.

  • Blanching the green beans and using an ice bath helps retain their bright green color and crisp texture.
