- 14 oz grape or cherry tomatoes, halved
- 1/2 cup chopped fresh basil leaves
- 1/4 cup chopped fresh Italian parsley leaves
- 1/2 cup feta cheese, cubed
- Optional: 1/4 cup toasted pine nuts or walnuts
- Optional: 1/4 cup sliced Kalamata olives
- Optional: 1/2 cup diced cucumber
- Optional: 1/2 avocado, diced
Instructions
- Bring a large pot of salted water to a boil. Add green beans and cook for 2-3 minutes until crisp-tender. Immediately transfer to an ice bath to stop cooking, then drain and pat dry.
- In a small bowl, whisk together lemon juice, minced garlic, olive oil, oregano, salt, and pepper to make the dressing.
- In a large bowl, combine green beans, tomatoes, basil, parsley, and feta cheese.
- Drizzle the dressing over the salad and toss gently to coat.
- If desired, mix in optional ingredients like nuts, olives, cucumber, or avocado.
- Chill for 10–15 minutes before serving to allow flavors to meld.
