  • 2 large sweet potatoes
  • 3 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • 1 teaspoon black pepper, divided
  • 3 teaspoons paprika, divided
  • 2 teaspoons garlic powder, divided
  • 1 pound lean ground beef
  • 2 tablespoons honey
  • 1 teaspoon sriracha
  • 1/4 teaspoon crushed red pepper
  • 2 cups 2% low-fat cottage cheese
  • 1 diced avocado

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss diced sweet potatoes with 2 tablespoons olive oil, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon paprika, and 1 teaspoon garlic powder. Spread on the baking sheet and roast for 30-40 minutes, flipping halfway, until tender and golden brown.
  3. While sweet potatoes roast, heat 1 tablespoon olive oil in a skillet over medium heat. Add ground beef, remaining salt, pepper, paprika, and garlic powder. Cook for about 10 minutes until browned.
  4. In a microwave-safe bowl, heat honey for 10 seconds, then mix in sriracha and crushed red pepper.
  5. Assemble bowls with roasted sweet potatoes, ground beef, cottage cheese, and diced avocado. Drizzle with hot honey and enjoy!
