- 2 large sweet potatoes
- 3 tablespoons olive oil, divided
- 1 teaspoon salt, divided
- 1 teaspoon black pepper, divided
- 3 teaspoons paprika, divided
- 2 teaspoons garlic powder, divided
- 1 pound lean ground beef
- 2 tablespoons honey
- 1 teaspoon sriracha
- 1/4 teaspoon crushed red pepper
- 2 cups 2% low-fat cottage cheese
- 1 diced avocado
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, toss diced sweet potatoes with 2 tablespoons olive oil, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon paprika, and 1 teaspoon garlic powder. Spread on the baking sheet and roast for 30-40 minutes, flipping halfway, until tender and golden brown.
- While sweet potatoes roast, heat 1 tablespoon olive oil in a skillet over medium heat. Add ground beef, remaining salt, pepper, paprika, and garlic powder. Cook for about 10 minutes until browned.
- In a microwave-safe bowl, heat honey for 10 seconds, then mix in sriracha and crushed red pepper.
- Assemble bowls with roasted sweet potatoes, ground beef, cottage cheese, and diced avocado. Drizzle with hot honey and enjoy!
