- 8 precooked frozen hash brown patties
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 1/2 cups diced cooked beef (about 3/4 pound)
- 2 scallions, diced
- 9 large eggs
- 1 cup whole milk
- 1/2 teaspoon salt
- 1/2 teaspoon dry ground mustard (optional)
- 1/4 teaspoon garlic powder
- Cooking spray or butter (for greasing the pan)
- Optional add-ons: diced bell peppers, a small can of diced green chilies, fresh herbs like parsley or chives, a pinch of smoked paprika
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- Layer the frozen hash brown patties evenly in the baking dish.
- Scatter the diced cooked beef over the hash browns and top with diced scallions.
- Sprinkle half of the shredded cheeses (1 cup cheddar and 1/2 cup Monterey Jack) over the meat and scallions.
- In a bowl, whisk together the eggs, whole milk, salt, dry ground mustard, and garlic powder.
- Pour the egg mixture over the layers in the dish.
- Top with remaining cheeses (1 cup cheddar and 1/2 cup Monterey Jack).
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil and continue baking for another 35–45 minutes until fully set and golden.
- Let it rest for 10–15 minutes before serving.
Notes
Assemble and refrigerate overnight for easier morning prep. Adjust seasonings to taste and make sure to rest the casserole before cutting.
