- 1/2 Cup Chickpeas (canned or cooked)
- 1 lb Lean Ground Turkey
- 1 Large Egg
- 1/2 tsp Allspice
- 1/4 tsp Garlic Powder
- Salt and Pepper (to taste)
- 1 Tbsp Olive Oil
- 1/2 Stick Butter
- 1/2 Cup Almond Flour (or flour of choice)
- 1/2 Cup Plain Yogurt
- 2 Cups Beef Broth
- Optional: Fresh herbs (like parsley or dill) and lemon juice
Instructions
- Prepare the Bread: Toast one slice of bread until golden, then break into small pieces.
- Mash the Chickpeas: Mash the chickpeas until chunky using a food processor or fork.
- Mix the Ingredients: Combine bread pieces, mashed chickpeas, turkey, egg, allspice, garlic powder, salt, and pepper in a bowl until just mixed.
- Form the Meatballs: Roll mixture into meatballs about 1.5 inches in diameter.
- Cook the Meatballs: Heat olive oil in a pan and cook meatballs for 20-25 minutes, turning occasionally, until cooked through.
- Prepare the Sauce: Melt butter in the same pan, whisk in almond flour until smooth.
- Make it Creamy: Add yogurt and beef broth to the mixture, whisking until smooth. Simmer and thicken the sauce.
- Coat the Meatballs: Add meatballs back to sauce and coat thoroughly.
- Serve or Freeze: Serve warm over preferred sides or freeze for later use.
Notes
Avoid overmixing to prevent tough meatballs. Ensure meatballs are cooked through to an internal temperature of 165°F.
