A hearty, comforting Vegetable Orzo Soup loaded with fresh vegetables, herbs, orzo pasta, and vibrant flavors for a nourishing and delicious meal.

- 1 tbsp butter or olive oil
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 1 cup chopped celery
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 2 medium potatoes, cut into 1/2-inch cubes
- 1 (14.5 oz) can diced tomatoes
- 6–7 cups vegetable broth
- 1 tbsp Worcestershire sauce
- 1 1/2 tbsp brown sugar
- 1 tbsp Italian seasoning
- 1 tsp seasoned salt
- 1 tsp celery salt
- 1/3 cup dry orzo pasta
- 1 cup frozen sweet corn
- 1/2 cup chopped fresh parsley
- 1/2 tsp fresh lemon juice or apple cider vinegar (optional)
- Kosher salt and freshly ground black pepper, to taste
- Freshly grated Parmesan cheese (optional)
- Optional add-ons: bell peppers, zucchini, green beans, chickpeas, white beans
Instructions
- Heat a large pot over medium heat and add butter or olive oil.
- Sauté onion, carrots, and celery for 8–10 minutes until softened and slightly caramelized.
- Add minced garlic and tomato paste; cook for 1 minute until fragrant.
- Add potatoes, diced tomatoes, vegetable broth, Worcestershire sauce, brown sugar, Italian seasoning, seasoned salt, and celery salt. Stir well.
- Bring the mixture to a boil, then reduce to a gentle simmer.
- Stir in the dry orzo and simmer uncovered for 25–30 minutes until orzo is tender.
- Add frozen sweet corn during the last 5 minutes of cooking.
- Adjust seasoning with salt and pepper; stir in parsley and optional lemon juice or vinegar.
- Serve warm and top with Parmesan cheese if desired.
Notes
- Use pre-chopped or frozen vegetables to save time.
- Chicken broth may be used if not vegetarian.
- Any neutral cooking oil can replace olive oil or butter.
- Add beans for extra protein or additional vegetables for more flavor.
