Description

A hearty, comforting Vegetable Orzo Soup loaded with fresh vegetables, herbs, orzo pasta, and vibrant flavors for a nourishing and delicious meal.


Ingredients

  • 1 tbsp butter or olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 1 cup chopped celery
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 medium potatoes, cut into 1/2-inch cubes
  • 1 (14.5 oz) can diced tomatoes
  • 67 cups vegetable broth
  • 1 tbsp Worcestershire sauce
  • 1 1/2 tbsp brown sugar
  • 1 tbsp Italian seasoning
  • 1 tsp seasoned salt
  • 1 tsp celery salt
  • 1/3 cup dry orzo pasta
  • 1 cup frozen sweet corn
  • 1/2 cup chopped fresh parsley
  • 1/2 tsp fresh lemon juice or apple cider vinegar (optional)
  • Kosher salt and freshly ground black pepper, to taste
  • Freshly grated Parmesan cheese (optional)
  • Optional add-ons: bell peppers, zucchini, green beans, chickpeas, white beans

Instructions

  1. Heat a large pot over medium heat and add butter or olive oil.
  2. Sauté onion, carrots, and celery for 8–10 minutes until softened and slightly caramelized.
  3. Add minced garlic and tomato paste; cook for 1 minute until fragrant.
  4. Add potatoes, diced tomatoes, vegetable broth, Worcestershire sauce, brown sugar, Italian seasoning, seasoned salt, and celery salt. Stir well.
  5. Bring the mixture to a boil, then reduce to a gentle simmer.
  6. Stir in the dry orzo and simmer uncovered for 25–30 minutes until orzo is tender.
  7. Add frozen sweet corn during the last 5 minutes of cooking.
  8. Adjust seasoning with salt and pepper; stir in parsley and optional lemon juice or vinegar.
  9. Serve warm and top with Parmesan cheese if desired.

Notes

  • Use pre-chopped or frozen vegetables to save time.
  • Chicken broth may be used if not vegetarian.
  • Any neutral cooking oil can replace olive oil or butter.
  • Add beans for extra protein or additional vegetables for more flavor.
