Ingredients

  • 3 cups vegetable or chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground ginger (or 1 tbsp fresh grated ginger)
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • Black pepper, to taste
  • 1/2 tsp olive oil

Optional Add-Ins:

  • 1 cup coconut milk or heavy cream
  • Fresh herbs like chives or basil, for garnish

Instructions

  1. Sauté Onion: Heat olive oil in a large pot over low heat. Add chopped onion and cook for about 5 minutes until soft and translucent.
  2. Add Garlic: Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add Spices: Sprinkle in ground ginger, cinnamon, and salt. Stir and cook for 30 seconds to release their aroma.
  4. Stir in Pumpkin: Add pumpkin puree and stir until well combined with the spices and onion mixture.
  5. Add Broth: Gradually pour in the broth while stirring to ensure a smooth consistency.
  6. Simmer: Bring to a gentle simmer and cook uncovered for 10–15 minutes to blend flavors.
  7. Add Cream (Optional): Stir in coconut milk or heavy cream and simmer for 2–3 more minutes until warmed through.
  8. Season: Add black pepper and adjust salt to taste.
  9. Serve: Ladle into bowls and garnish with fresh herbs or a swirl of cream, if desired.

Notes

  • Substitute pumpkin puree with sweet potato or butternut squash puree.
  • No fresh garlic? Use 1/2 tsp garlic powder.
  • Fresh ginger preferred, but ground ginger works well too.
  • Use dried herbs if fresh aren’t available for garnish.
