Description

Honey Lavender Ice Cream is a luxurious, floral-infused dessert featuring creamy custard, fragrant dried lavender, and natural honey sweetness. This homemade treat is the perfect balance of elegance and comfort, ideal for summer days or sophisticated gatherings.

Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 4 egg yolks
  • 3/4 cup honey
  • 2 tablespoons dried culinary lavender
  • 1 teaspoon sea salt
  • 1 tablespoon vanilla extract
  • Optional: chocolate chips, chopped pistachios or almonds, fresh berries

Instructions

  1. In a small saucepan, combine heavy cream, whole milk, egg yolks, honey, dried lavender, sea salt, and vanilla extract.
  2. Place the saucepan over low heat and stir consistently until the mixture begins to steam and the honey dissolves.
  3. Simmer gently for about 20 minutes, stirring occasionally. Do not let it boil.
  4. Optional: Strain the mixture through a fine sieve into a heat-proof container to remove the lavender buds.
  5. Let the mixture cool for at least 2 hours in the refrigerator.
  6. Once cooled, stir the mixture well and taste for final adjustments (e.g., more honey or salt if desired).
  7. Pour into an ice cream maker and churn according to manufacturer’s instructions (usually around 20 minutes).
  8. Transfer the churned ice cream into an airtight container, smooth the top, and seal.
  9. Freeze for at least 3 hours before serving to allow it to firm up.

Notes

  • You can leave the lavender flowers in for a stronger flavor and rustic appearance.
  • Rosewater or lemon zest can be used as a substitute for dried lavender.
  • Serve with fresh berries or chopped nuts for added texture and flavor contrast.
  • Do not skip the chilling step before churning—it helps with texture.
