  • 1/3 cup Dijon mustard
  • 1/3 cup honey
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Optional: spicy Dijon mustard, cayenne pepper, parsley or cilantro (for garnish), lemon wedges (for serving)

Instructions

  1. In a medium bowl, whisk together Dijon mustard, honey, olive oil, lemon juice, soy sauce, garlic, paprika, salt, pepper, onion powder, and thyme.
  2. Place the chicken breasts in a resealable bag or shallow dish. Pour marinade over the chicken and refrigerate for at least 30 minutes, up to 8 hours for deeper flavor.
  3. Preheat grill to medium-high heat. Oil the grates to prevent sticking.
  4. Remove chicken from marinade and grill for 5–7 minutes per side or until internal temperature reaches 165°F (75°C).
  5. Let rest for 5 minutes before slicing. Garnish with fresh herbs and serve with lemon wedges if desired.

Notes

  • For extra flavor, reserve some marinade before adding the raw chicken to use as a drizzle after cooking (boil before using).
