Description

Crust Essentials:

  • 6 Tbsp ice water
  • 1 egg (beaten, for egg wash)
  • 1 Tbsp coarse sugar (for topping)

Filling:

  • 1 lb fresh peaches (about 34 medium, thinly sliced, ~3 cups)
  • 1/4 cup granulated sugar
  • 1 Tbsp all-purpose flour
  • 1/2 tsp ground cinnamon
  • 1/2 tsp pure vanilla extract
  • 1/2 Tbsp unsalted butter (for dotting on filling)

Optional Add-ons:

  • Fresh thyme or rosemary
  • Lemon or orange zest

Substitutions:

  • Plant-based butter or coconut oil for a dairy-free crust
  • Gluten-free all-purpose blend for gluten-free version
  • Canned or frozen peaches with reduced sugar

Instructions

  1. Make the Dough: In a food processor, pulse together flour, sugar, and salt. Add cold cubed butter and pulse until butter is the size of peas. Slowly add ice water, pulsing until dough just comes together.
  2. Chill: Form dough into a disc, wrap in plastic, and refrigerate for at least 1 hour.
  3. Preheat Oven: Set oven to 425°F (220°C).
  4. Roll Out Dough: Roll chilled dough into a 12-inch circle on floured parchment. Transfer to baking sheet and chill briefly.
  5. Prepare Filling: In a bowl, mix sliced peaches with sugar, flour, cinnamon, and vanilla extract. Let sit for a few minutes to release juices.
  6. Assemble Galette: Spoon peach mixture onto the dough, leaving a 2-inch border. Discard excess liquid. Dot fruit with small pieces of butter.
  7. Fold and Finish: Fold dough edges over fruit, overlapping slightly and pinching to seal. Brush crust with beaten egg and sprinkle with coarse sugar.
  8. Bake: Bake for 25–30 minutes or until crust is golden and filling is bubbly.
  9. Cool and Serve: Let cool for 15 minutes before slicing. Serve warm or at room temperature.
