  • 1 cup fresh basil leaves, chopped
  • 1 cup cherry tomatoes, halved
  • 8 oz burrata cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Balsamic glaze (optional)
  • Parmesan cheese, grated (optional)
  • Red pepper flakes (optional)

Instructions

  1. Season the chicken cutlets with salt and pepper on both sides.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Cook the chicken cutlets for 3–4 minutes per side, or until golden brown and fully cooked through. Remove and set aside.
  4. In the same skillet, add another tablespoon of olive oil and sauté the minced garlic for about 1 minute until fragrant.
  5. Add the cherry tomatoes and cook for 2–3 minutes until they begin to soften.
  6. Remove the pan from heat and stir in the chopped basil.
  7. Place the cooked chicken cutlets on a serving platter. Spoon the tomato-basil mixture over the top of each cutlet.
  8. Top each cutlet with a portion of burrata cheese.
  9. Drizzle with balsamic glaze, sprinkle with Parmesan cheese, and red pepper flakes if using.
  10. Serve immediately while warm.
