Description

Instructions

  1. In a large mixing bowl, combine flour, baking powder, garlic powder, salt, sugar, and cayenne or paprika if using.
  2. In a separate bowl, whisk together the egg, milk, and melted butter until smooth.
  3. Stir the wet ingredients into the dry ingredients until just combined.
  4. Fold in the cheddar cheese, sweet corn, diced jalapeños, and optional herbs or alternative cheese.
  5. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  6. Using a tablespoon or small cookie scoop, drop spoonfuls of the batter into the hot oil.
  7. Fry in batches for 2–3 minutes per side, or until golden brown and cooked through.
  8. Use a slotted spoon to transfer the nuggets to a paper towel-lined plate to drain excess oil.
