Description

A hearty, comforting Lasagna Soup that captures all the classic flavors of traditional lasagna—savory meat, rich tomato broth, tender noodles, and a creamy cheese topping—in an easy, one-pot meal.

  • 1/2 pound lean ground beef
  • 1/2 pound ground Italian sausage
  • Salt and freshly ground black pepper, to taste
  • 1 yellow onion, chopped
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 recipe homemade marinara sauce or one 24 oz jar
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, chopped (or 2 teaspoons dried)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 7 cups low sodium chicken broth (or vegetable broth)
  • 9 lasagna noodles, broken into pieces
  • 2 cups fresh spinach leaves (optional)
  • 10 ounces ricotta cheese (or cottage cheese)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil, for serving
  • Optional: zucchini, mushrooms, beans

Instructions

  1. In a large pot over medium-high heat, cook the ground beef and Italian sausage, seasoning with salt and pepper. Break the meat into small pieces as it browns. Drain excess grease and remove meat from the pot.
  2. In the same pot, heat olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until soft and translucent. Add garlic and cook for 1 minute.
  3. Stir in the tomato paste, marinara sauce, red pepper flakes, parsley, oregano, and basil. Pour in the chicken broth and mix well.
  4. Return the cooked meat to the pot, stir, and bring the soup to a gentle boil.
  5. Add broken lasagna noodles and reduce heat to medium-low. Simmer for about 10 minutes, stirring occasionally, until noodles are tender.
  6. If using spinach, add it during the last 2 minutes of cooking and stir until wilted.
  7. In a small bowl, combine ricotta, mozzarella, and Parmesan cheese to create the cheese topping.
  8. Ladle soup into bowls and top each serving with a generous spoonful of the cheese mixture. Garnish with fresh basil.
