Description

These Lavender Lemon Bars are the perfect combination of tangy lemon, creamy filling, and floral lavender, layered over a buttery shortbread crust. Ideal for tea parties or a refreshing spring dessert.

    • 1/2 cup (100g) granulated sugar
    • 2 cups (250g) all-purpose flour
    • 1/2 tsp salt
    • 1 cup (227g or 2 sticks) unsalted butter, room temperature
    • 1 tsp vanilla extract
    • 2 tbsp culinary grade dried lavender buds
    • Juice + zest from 1 lemon
  • Optional Add-Ons:
    • Powdered sugar for dusting
    • Additional honey drizzle

Instructions

  1. Prep: Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking dish with parchment paper.
  2. Make the Crust: Cream together softened butter and sugar until light and fluffy (2–3 min). Mix in vanilla extract, then add flour and salt until just combined. Press into prepared dish and bake 15–20 min until lightly golden.
  3. Prepare Filling: Whisk egg yolks in a bowl until slightly frothy. Add sweetened condensed milk, lemon juice, honey, dried lavender, and additional lemon juice + zest. Mix well.
  4. Combine and Bake: Pour filling over the baked (and slightly cooled) crust. Bake for 20–25 min, until center is set but slightly jiggly. Let cool to room temperature, then refrigerate at least 2 hours.
  5. Serve: Cut into bars, dust with powdered sugar, and enjoy! Optionally drizzle with honey for added sweetness.
