Instructions
- Prepare the Mexican Cauliflower Rice by washing and chopping the cauliflower into florets, then pulse in a food processor until it resembles rice grains. Sauté in a skillet over medium heat with olive oil for 5-7 minutes, season with salt, pepper, and taco seasoning.
- Cook your chicken by grilling, baking, or sautéing until fully cooked, then shred.
- Assemble the bowls with a scoop of cauliflower rice, shredded chicken, and arugula or kale.
- Add the sliced avocado just before serving.
