- 4 boneless, skinless chicken breasts (thinly-sliced)
- Kosher salt (to taste)
- Ground black pepper (to taste)
- 1 medium sweet potato (peeled and chopped into cubes)
- 1 pound Brussels sprouts (outer leaves removed, then halved)
- ¼ cup olive oil
- 3 tablespoons Dijon mustard
- 2 tablespoons pure maple syrup
- 2 tablespoons balsamic vinegar
- 2 cloves garlic (grated)
- 2 teaspoons chopped fresh rosemary (or ½ teaspoon dried)
Instructions
- Preheat your oven to 425°F (220°C).
- Season the thinly sliced chicken breasts with kosher salt and ground black pepper.
- In a bowl, combine ¼ cup olive oil, 3 tablespoons Dijon mustard, 2 tablespoons maple syrup, 2 tablespoons balsamic vinegar, 2 grated garlic cloves, and 2 teaspoons chopped fresh rosemary.
- Toss chicken and cubed sweet potato with one-third of the maple Dijon dressing.
- Spread the chicken and sweet potato mix on a sheet pan and bake for 10 minutes.
- In the same bowl, toss halved Brussels sprouts with the next one-third of the dressing.
- Add Brussels sprouts to the sheet pan and continue baking for another 15-20 minutes.
- Drizzle the remaining dressing over the dish before serving.
Notes
For added texture, consider adding red onion or nuts as toppings. You can also substitute chicken thighs for juicier meat.
