Description

A comforting and stress-free meal featuring tender chicken, sweet potatoes, and Brussels sprouts, all tossed in a sweet and tangy maple Dijon dressing.


Ingredients

  • 4 boneless, skinless chicken breasts (thinly-sliced)
  • Kosher salt (to taste)
  • Ground black pepper (to taste)
  • 1 medium sweet potato (peeled and chopped into cubes)
  • 1 pound Brussels sprouts (outer leaves removed, then halved)
  • ¼ cup olive oil
  • 3 tablespoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic (grated)
  • 2 teaspoons chopped fresh rosemary (or ½ teaspoon dried)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season the thinly sliced chicken breasts with kosher salt and ground black pepper.
  3. In a bowl, combine ¼ cup olive oil, 3 tablespoons Dijon mustard, 2 tablespoons maple syrup, 2 tablespoons balsamic vinegar, 2 grated garlic cloves, and 2 teaspoons chopped fresh rosemary.
  4. Toss chicken and cubed sweet potato with one-third of the maple Dijon dressing.
  5. Spread the chicken and sweet potato mix on a sheet pan and bake for 10 minutes.
  6. In the same bowl, toss halved Brussels sprouts with the next one-third of the dressing.
  7. Add Brussels sprouts to the sheet pan and continue baking for another 15-20 minutes.
  8. Drizzle the remaining dressing over the dish before serving.

Notes

For added texture, consider adding red onion or nuts as toppings. You can also substitute chicken thighs for juicier meat.
