Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, combine cherry tomatoes, red bell pepper, red onion, garlic, and crumbled feta cheese.
- Drizzle olive oil over the vegetables and cheese, then sprinkle with oregano, thyme, sea salt, black pepper, and red pepper flakes. Stir everything to combine evenly.
- Place the baking dish in the oven and bake for 15–20 minutes, or until the vegetables have softened and the feta is lightly browned.
- Remove the dish from the oven, stir in the chopped spinach until wilted from the heat.
- Make four small wells in the mixture and crack an egg into each one.
- Return the dish to the oven and bake for an additional 7–10 minutes, or until the egg whites are set but yolks are still runny (or to your desired doneness).
- Garnish with chopped fresh basil or chives before serving.
- Serve warm with crusty bread, pita, or on its own for a lower-carb option.
