  • 8 ounces feta cheese, crumbled

  • 1 teaspoon sea salt
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 1 cup baby spinach, chopped
  • 4 large eggs
  • Fresh basil or chives, chopped (for garnish)

  • Kalamata olives, pitted and sliced

  • Sun-dried tomatoes
  • Avocado slices (add after baking)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, combine cherry tomatoes, red bell pepper, red onion, garlic, and crumbled feta cheese.
  3. Drizzle olive oil over the vegetables and cheese, then sprinkle with oregano, thyme, sea salt, black pepper, and red pepper flakes. Stir everything to combine evenly.
  4. Place the baking dish in the oven and bake for 15–20 minutes, or until the vegetables have softened and the feta is lightly browned.
  5. Remove the dish from the oven, stir in the chopped spinach until wilted from the heat.
  6. Make four small wells in the mixture and crack an egg into each one.
  7. Return the dish to the oven and bake for an additional 7–10 minutes, or until the egg whites are set but yolks are still runny (or to your desired doneness).
  8. Garnish with chopped fresh basil or chives before serving.
  9. Serve warm with crusty bread, pita, or on its own for a lower-carb option.

  • For a firmer yolk, bake eggs a little longer (up to 12 minutes).
