- 2 tablespoons olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, pitted and halved
- 1 cup baby spinach (or arugula)
- ½ cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 tablespoon lemon juice
- Salt and black pepper, to taste
- ½ teaspoon paprika (optional for smoky flavor)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 3–4 minutes.
- Add garlic and ground chicken. Cook until the chicken is browned and cooked through, breaking it up with a spatula.
- Stir in cherry tomatoes, olives, oregano, paprika (if using), salt, and black pepper. Cook for another 3–4 minutes until tomatoes soften.
- Add spinach and cook just until wilted, about 1–2 minutes.
- Remove from heat and stir in lemon juice and chopped parsley.
- Top with crumbled feta and serve warm.

- For extra richness, add a drizzle of tahini or a dollop of Greek yogurt before serving.
- Arugula adds a peppery flavor, while spinach gives a more neutral base—both work well.
