  • 2 cups cherry or grape tomatoes, halved
  • 1 1/2 cups Persian cucumbers, sliced into rounds
  • 1 cup Kalamata olives, halved
  • 1/2 cup sliced pepperoncini
  • 1/3 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1/2 cup orange bell pepper, thinly sliced
  • 1/2 cup red bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 8 oz smoked gouda cheese, cut into 1/4-inch cubes
  • 6 oz beef salami, cut into 1/4-inch cubes
  • 1/2 cup fresh basil, chopped
  • Optional: Artichoke hearts
  • Optional: Feta cheese
  • Optional: Chickpeas

Instructions

  1. Cook rotini pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water to stop cooking. Set aside.
  2. In a large mixing bowl, combine halved tomatoes, cucumbers, Kalamata olives, pepperoncini, sun-dried tomatoes, bell peppers, and red onion.
  3. Add the cubed smoked gouda and salami to the bowl.
  4. Gently fold in the cooked and cooled pasta.
  5. Add chopped fresh basil and any optional ingredients such as artichoke hearts, feta cheese, or chickpeas.
  6. Toss everything together until evenly combined. Chill for at least 30 minutes before serving for best flavor.
