- 2 cups cherry or grape tomatoes, halved
- 1 1/2 cups Persian cucumbers, sliced into rounds
- 1 cup Kalamata olives, halved
- 1/2 cup sliced pepperoncini
- 1/3 cup sun-dried tomatoes, packed in oil, drained and chopped
- 1/2 cup orange bell pepper, thinly sliced
- 1/2 cup red bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 8 oz smoked gouda cheese, cut into 1/4-inch cubes
- 6 oz beef salami, cut into 1/4-inch cubes
- 1/2 cup fresh basil, chopped
- Optional: Artichoke hearts
- Optional: Feta cheese
- Optional: Chickpeas
Instructions
- Cook rotini pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water to stop cooking. Set aside.
- In a large mixing bowl, combine halved tomatoes, cucumbers, Kalamata olives, pepperoncini, sun-dried tomatoes, bell peppers, and red onion.
- Add the cubed smoked gouda and salami to the bowl.
- Gently fold in the cooked and cooled pasta.
- Add chopped fresh basil and any optional ingredients such as artichoke hearts, feta cheese, or chickpeas.
- Toss everything together until evenly combined. Chill for at least 30 minutes before serving for best flavor.
