Description

For the Berry Filling:

  • 78 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 2/3 cup sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of cinnamon

For the Biscuit Topping:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 5 tablespoons unsalted butter, cold and cubed
  • 2/3 cup buttermilk, cold
  • 1 tablespoon cold buttermilk (for brushing)
  • Coarse sugar for topping (optional)

Optional Add-Ons:

  • Splash of almond extract
  • Lemon or orange zest
  • Chopped nuts (e.g., almonds or pecans)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Baking Dish: Lightly grease a 2.5–3 quart baking dish with non-stick spray.
  3. Make the Filling: In a large bowl, gently toss the berries with sugar, cornstarch, lemon juice, vanilla, and cinnamon. Transfer to the baking dish and spread evenly.
  4. Make Biscuit Topping: In a separate bowl, mix flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  5. Add Buttermilk: Pour in 2/3 cup cold buttermilk and stir just until combined. Do not overmix.
  6. Top the Cobbler: Dollop spoonfuls of the dough over the berry mixture, letting some fruit show through.
  7. Brush & Sprinkle: Brush dough with 1 tablespoon cold buttermilk and sprinkle with coarse sugar, if using.
  8. Bake: Bake for 40–45 minutes, or until topping is golden and berries are bubbly.
  9. Cool & Serve: Let the cobbler cool for 5–10 minutes before serving. Enjoy warm with vanilla ice cream or whipped cream.
