For the Cake:

  • 230g (1 cup / 2 sticks) unsalted butter, at room temperature
  • 180g (1 cup) brown sugar
  • 100g (½ cup) caster or granulated sugar
  • 250g (1 cup) smooth peanut butter (Skippy or Jif recommended)
  • 1 tsp vanilla extract
  • 3 large eggs, at room temperature
  • 2 tsp baking powder
  • ¼ tsp salt
  • 315g (2¼ cups) all-purpose (plain) flour
  • 240ml (1 cup) full-fat (whole) milk

For the Peanut Butter Frosting:

  • 115g (½ cup / 1 stick) unsalted butter, at room temperature
  • 150g (1 cup) good-quality milk chocolate, melted
  • 375g (3 cups) icing (powdered) sugar, sifted
  • 23 tbsp full-fat (whole) milk, at room temperature
  • 1 tbsp smooth peanut butter
  • 180g (1 cup) mini M&M’s

Optional Add-Ons:

  • Chocolate chips – mix into the batter for more chocolate flavor
  • Chopped nuts – such as peanuts for added crunch

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the peanut butter and vanilla extract.
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Alternately add the dry ingredients and milk to the wet ingredients, starting and ending with the flour. Mix until just combined.
  7. Divide the batter evenly between the prepared cake pans. Smooth the tops.
  8. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
  9. To make the frosting, beat butter and peanut butter until creamy. Add in melted chocolate and mix until smooth.
  10. Gradually add powdered sugar and milk, beating until desired consistency is reached.
  11. Frost the cooled cakes and top with mini M&M’s.

Notes

  • You can bake this as a sheet cake if preferred — adjust baking time accordingly.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer shelf life.
  • This cake freezes well without the frosting.
