A deliciously simple no-bake treat made with creamy peanut butter and rolled oats for a sweet and comforting snack.

Ingredients

Scale
  • 2 cups rolled oats (old-fashioned preferred)
  • 1 cup creamy peanut butter (room temperature)
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract

  • 1 cup chocolate chips (semi-sweet or dark)

Instructions

  1. Line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. Combine peanut butter, honey (or maple syrup), vanilla extract, and pinch of salt in a bowl. Stir until smooth.
  3. Add rolled oats to the mixture and stir until evenly coated.
  4. Transfer the mixture to the prepared pan, pressing it evenly.
  5. Melt chocolate chips in a microwave-safe bowl, stirring until smooth.
  6. Pour melted chocolate over the oat mixture or stir into the mixture.
  7. Chill in the refrigerator for at least 2 hours to firm up.
  8. Slice into bars and store in an airtight container.

Notes

To make vegan, use maple syrup and dairy-free chocolate chips. For a crunchier variation, mix in chopped nuts or cereal.
