Description

These No-Bake Mini Key Lime Pies are a refreshing, tangy, and creamy dessert perfect for summer or anytime you crave a citrusy treat. With a buttery graham cracker crust and a luscious lime filling, they’re easy to make and don’t require an oven.


Ingredients

  • 1 1/2 cups (180 g) graham cracker crumbs
  • 1/3 cup (75 g) unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 can (14 oz/400 g) sweetened condensed milk
  • 1/2 cup (120 ml) fresh key lime juice (or regular lime juice)
  • 1 teaspoon lime zest
  • 1 cup (240 ml) heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • Optional: Lime slices or extra zest for garnish
  • Optional: Whipped cream for serving

Instructions

  1. In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until fully combined.
  2. Press the mixture firmly into the bottoms of a muffin tin lined with cupcake liners or into mini tart pans. Refrigerate for at least 15 minutes to set.
  3. In a large bowl, whisk together the sweetened condensed milk, key lime juice, and lime zest until smooth and slightly thickened.
  4. In a separate bowl, whip the cold heavy cream and powdered sugar until stiff peaks form.
  5. Fold half of the whipped cream into the lime mixture to lighten it. Reserve the rest for topping.
  6. Spoon the lime filling into the chilled crusts and smooth the tops.
  7. Refrigerate for at least 2 hours or until set.
  8. Top with the remaining whipped cream and garnish with lime slices or zest before serving.

Notes

  • You can use store-bought graham cracker crusts for convenience.
  • These pies can be made a day ahead and stored in the fridge until ready to serve.
  • If you prefer a stronger citrus flavor, add more lime zest to the filling.
