This No Churn Lavender Ice Cream is a dreamy, floral treat made with creamy whipped cream, lavender-infused milk, honey, and lemon zest. Perfectly sweet and smooth, it requires no ice cream maker and is naturally elegant.

- 2 cups heavy whipping cream
- 1 cup milk (for lavender infusion, whole milk preferred)
- 1 (14 oz) can sweetened condensed milk
- 1/4 cup honey
- 2 tablespoons dried culinary lavender
- 1 teaspoon sea salt
- 2 tablespoons vanilla extract
- Juice and zest of 1 lemon
- Optional: chopped fresh mint or basil, fruit puree swirl (raspberry, blueberry)
Instructions
- Chill a 6-cup freezer-safe container in the freezer.
- In a saucepan, heat the milk and dried lavender over low heat for 10 minutes, stirring occasionally. Do not let it boil.
- Meanwhile, in a large mixing bowl, whip the heavy cream until stiff peaks form. Set aside.
- Strain the lavender-infused milk through a fine mesh sieve into a large bowl.
- To the lavender milk, add sweetened condensed milk, honey, vanilla extract, sea salt, lemon juice, and zest. Stir to combine.
- Gently fold the whipped cream into the mixture until fully combined, being careful not to deflate it.
- Pour the mixture into the chilled container, smooth the top, and cover with a lid.
- Freeze for at least 6 hours or until firm.

Notes
- For dairy-free, use coconut cream and coconut milk in place of dairy cream and milk.
- If short on time, use lavender extract instead of infusing milk with dried lavender.
