A comforting one-pan meal featuring juicy chicken and tender baby potatoes with aromatic flavors of garlic, lemon, and spices.
Ingredients
Scale
- 8 chicken thighs and drumsticks (about 2 1/2 pounds)
- 1 1/2 pounds baby potatoes (halved)
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 6 garlic cloves (pressed)
- 1 teaspoon 7 spice
- 1 teaspoon paprika
- 2 teaspoons salt
- 1 teaspoon black pepper
- Vegetables like carrots or bell peppers (optional)
- Fresh herbs, such as rosemary or thyme (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Dry the chicken and baby potatoes thoroughly using a paper towel.
- Arrange the chicken and halved baby potatoes in a 9 x 13 oven-safe baking dish.
- In a small bowl, whisk together the olive oil, lemon juice, pressed garlic, 7 spice, paprika, salt, and black pepper.
- Drizzle the prepared sauce over the chicken and potatoes, massaging it in for even coating.
- Bake uncovered for 55-65 minutes, until the potatoes are fork-tender and the chicken is golden and cooked through.
- If desired, broil for an additional 3-5 minutes for extra crispiness.
- Let the chicken rest for about 5 minutes before serving.
- Garnish with fresh parsley and serve.
Notes
Ensure the chicken and potatoes are dry before seasoning for a crispier texture. Avoid overcrowding the pan for better roasting.
