Ingredients

  • 455g skinless, boneless chicken thighs, cut into pieces
  • 4 green onions, chopped (white and green parts)
  • 3 cloves garlic, crushed
  • 2 tablespoons gochujang
  • 2 tablespoons maple syrup
  • 1 tablespoon light soy sauce
  • 1 carrot, julienned
  • 170g kimchi, roughly chopped
  • 190g uncooked medium-grain rice
  • 480ml chicken broth
  • 2 teaspoons sesame oil
  • Salt and black pepper to taste
  • Calorie-controlled cooking spray
  • Optional: Fried egg, crushed nori seaweed, fresh herbs like cilantro

Instructions

  1. Prep the Pot: Spray a large, deep skillet or pot with calorie-controlled cooking spray. Heat over medium-high heat.
  2. Cook the Chicken: Add chicken pieces and season with salt and pepper. Add white parts of green onions and cook until golden brown (5-7 minutes).
  3. Add Flavor: Stir in garlic, gochujang, maple syrup, and soy sauce to coat the chicken.
  4. Incorporate the Goodies: Add kimchi, carrot, rice, chicken broth, and sesame oil. Stir to combine.
  5. Bring to a Boil: Increase heat to bring the mixture to a boil.
  6. Simmer to Perfection: Reduce heat to low, cover, and let it simmer undisturbed for 12-15 minutes.
  7. Resting Time: Remove from heat and let it rest for 10 minutes with the lid on.
  8. Fluff the Rice: Fluff the rice with a spoon and sprinkle the green parts of the onions.
  9. Serve and Enjoy: Serve as is or top with a fried egg and crushed nori.
