- 4 green onions, chopped (white and green parts)
- 3 cloves garlic, crushed
- 2 tablespoons gochujang
- 2 tablespoons maple syrup
- 1 tablespoon light soy sauce
- 1 carrot, julienned
- 170g kimchi, roughly chopped
- 190g uncooked medium-grain rice
- 480ml chicken broth
- 2 teaspoons sesame oil
- Salt and black pepper to taste
- Calorie-controlled cooking spray
- Optional: Fried egg, crushed nori seaweed, fresh herbs like cilantro
Instructions
- Prep the Pot: Spray a large, deep skillet or pot with calorie-controlled cooking spray. Heat over medium-high heat.
- Cook the Chicken: Add chicken pieces and season with salt and pepper. Add white parts of green onions and cook until golden brown (5-7 minutes).
- Add Flavor: Stir in garlic, gochujang, maple syrup, and soy sauce to coat the chicken.
- Incorporate the Goodies: Add kimchi, carrot, rice, chicken broth, and sesame oil. Stir to combine.
- Bring to a Boil: Increase heat to bring the mixture to a boil.
- Simmer to Perfection: Reduce heat to low, cover, and let it simmer undisturbed for 12-15 minutes.
- Resting Time: Remove from heat and let it rest for 10 minutes with the lid on.
- Fluff the Rice: Fluff the rice with a spoon and sprinkle the green parts of the onions.
- Serve and Enjoy: Serve as is or top with a fried egg and crushed nori.
