  • 3 tbsp olive oil
  • 1/4 cup yellow onion, diced
  • 1 cup uncooked extra-long grain rice
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp chili powder
  • Salt and pepper to taste
  • 2 to 2 1/4 cups water or low-sodium chicken broth

Instructions

  1. Prep your ingredients by cutting the chicken, draining tomatoes, and rinsing beans.
  2. Heat oil in a large pot over medium heat.
  3. Add the diced onion and sauté for 3–4 minutes until translucent.
  4. Brown the chicken pieces for 3–4 minutes until lightly browned.
  5. Add garlic powder, onion powder, and chili powder; toast for 30–45 seconds.
  6. Mix in rice, tomatoes, and beans; combine well.
  7. Add enough water or broth to cover everything by 1/4–1/2 inch.
  8. Bring to a gentle boil, then reduce heat, cover, and cook for 18–22 minutes.
  9. Check doneness and let sit covered for 5 minutes before fluffing.
  10. Serve warm with your favorite toppings.
