- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 3 tbsp olive oil
- 1/4 cup diced yellow onion
- 1 cup uncooked extra-long grain rice
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp chili powder
- Salt and freshly ground black pepper, to taste
- Water (about 2 cups, or as recommended on rice package)
Instructions
- Prep and measure the ingredients, cut chicken into bite-sized cubes.
- Heat olive oil in a large pot over medium heat and sauté diced onions until translucent.
- Add chicken pieces and brown on medium-high heat for 5-7 minutes.
- Sprinkle in garlic powder, onion powder, and chili powder; stir to coat.
- Add rice, drained tomatoes, and black beans; stir to combine.
- Add water, bring the mixture to a gentle boil.
- Cover and reduce heat to low, cooking for the time specified on your rice package (usually about 18 minutes for long-grain rice).
- Once cooked, let sit for another 5-10 minutes, then fluff the rice.
- Serve with optional toppings like cilantro, cheese, avocado, and lime juice.
