- 1 tablespoon unsalted butter
- 1 small onion, finely diced
- 1 medium carrot, peeled and finely diced
- 1 celery stalk, finely diced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cups low sodium chicken broth
- 3/4 cup uncooked pastina or Acini di Pepe
- 2 tablespoons grated Parmesan cheese, plus more for serving
- Zest and juice of 1 small lemon
- Chopped fresh parsley for garnish
Instructions
- Melt the butter in a medium pot over medium heat.
- Add the finely diced onion, carrot, and celery. Sprinkle in the salt and pepper, and sauté for about 5-6 minutes until soft and fragrant.
- Pour in the chicken broth and bring to a gentle boil.
- Add the uncooked pastina and cook according to package directions, usually around 12-15 minutes, stirring occasionally.
- Once cooked, turn off the heat and stir in the grated Parmesan cheese, lemon zest, and juice.
- Ladle the soup into warm bowls and top with extra Parmesan cheese and fresh parsley before serving.
