Description

A comforting and simple soup made with small pasta, vegetables, and chicken broth, perfect for chilly days.


Ingredients

  • 1 tablespoon unsalted butter
  • 1 small onion, finely diced
  • 1 medium carrot, peeled and finely diced
  • 1 celery stalk, finely diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups low sodium chicken broth
  • 3/4 cup uncooked pastina or Acini di Pepe
  • 2 tablespoons grated Parmesan cheese, plus more for serving
  • Zest and juice of 1 small lemon
  • Chopped fresh parsley for garnish

Instructions

  1. Melt the butter in a medium pot over medium heat.
  2. Add the finely diced onion, carrot, and celery. Sprinkle in the salt and pepper, and sauté for about 5-6 minutes until soft and fragrant.
  3. Pour in the chicken broth and bring to a gentle boil.
  4. Add the uncooked pastina and cook according to package directions, usually around 12-15 minutes, stirring occasionally.
  5. Once cooked, turn off the heat and stir in the grated Parmesan cheese, lemon zest, and juice.
  6. Ladle the soup into warm bowls and top with extra Parmesan cheese and fresh parsley before serving.

Notes

For added comfort, pair with crusty bread or a grilled cheese sandwich.
