Peach Quinoa Tabbouleh

  • Author: Sarah Mendez
  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Description

Peach Quinoa Tabbouleh is a refreshing twist on a classic Mediterranean dish, combining sweet, juicy peaches with fluffy quinoa, crisp cucumber, and loads of fresh herbs. It’s light, flavorful, and perfect as a side or a standalone meal for warm-weather gatherings or weekday lunches.

Ingredients

Scale
  • Juice of 3 lemons – for a bright, tangy dressing
  • 2 tsp honey – adds subtle sweetness
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • ⅓ cup extra virgin olive oil – for richness and smooth texture
  • 4 cups cooked quinoa – cooled before mixing
  • 3 large peaches – pitted and diced
  • 1 English cucumber – diced
  • 1½ cups fresh parsley – chopped
  • 1 cup fresh mint – chopped

Optional Add-Ons:

  • Crumbled feta cheese
  • Sliced radishes
  • Chopped bell peppers
  • Cherry tomatoes
  • Almonds or walnuts (chopped)

Substitutions: Use agave or maple syrup instead of honey. Canned peaches (drained) can replace fresh peaches. High-quality dried herb blends may be used in a pinch.

Instructions

  1. Make the Dressing: In a large bowl, whisk together lemon juice, honey, salt, and pepper. While whisking, slowly drizzle in olive oil until emulsified and slightly thickened.
  2. Combine Salad Ingredients: Add cooked and cooled quinoa, diced peaches, cucumber, chopped parsley, and mint to the bowl. Stir gently to combine.
  3. Taste and Adjust: Taste and adjust seasoning as needed—add more salt, pepper, or lemon juice to suit your preference.
  4. Serve: Serve warm, at room temperature, or chilled. For the best flavor, let it chill for at least 30 minutes before serving.

Notes

  • Chilling: Letting the salad chill helps meld the flavors together beautifully.
  • Serving Idea: Great as a side with grilled meats, or serve with pita and hummus for a light vegetarian meal.
  • Storage: Keeps well in the fridge for up to 3 days.
