- ½ cup creamy peanut butter
- 1 whole egg
- ¾ teaspoon vanilla extract
- 1⅓ cup all-purpose flour

- ¾ teaspoon baking soda
- ¼ cup granulated sugar for rolling

Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
- Add creamy peanut butter, egg, and vanilla extract, blending until well combined.
- In a separate bowl, whisk together all-purpose flour, salt, and baking soda, then gradually add to the butter mixture.
- Roll tablespoon-sized balls of dough, then roll in the reserved sugar.
- Place on baking sheets, pressing a well into the center of each cookie, and bake for 10-12 minutes.
- Make the peanut butter buttercream while cookies cool and then fill each well with jelly followed by buttercream.
- Allow cookies to set before serving.
Notes
For dairy-free options, substitute coconut oil for butter and almond/cashew butter for peanut butter. Chill dough for better shape retention when baking.
