Description

Ingredients

  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ cup creamy peanut butter
  • 1 whole egg
  • ¾ teaspoon vanilla extract
  • 1⅓ cup all-purpose flour
  • Pinch of salt
  • ¾ teaspoon baking soda
  • ¼ cup granulated sugar for rolling
  • Optional: Chocolate chips, chopped nuts, flavored jellies

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add creamy peanut butter, egg, and vanilla extract, blending until well combined.
  4. In a separate bowl, whisk together all-purpose flour, salt, and baking soda, then gradually add to the butter mixture.
  5. Roll tablespoon-sized balls of dough, then roll in the reserved sugar.
  6. Place on baking sheets, pressing a well into the center of each cookie, and bake for 10-12 minutes.
  7. Make the peanut butter buttercream while cookies cool and then fill each well with jelly followed by buttercream.
  8. Allow cookies to set before serving.

Notes

For dairy-free options, substitute coconut oil for butter and almond/cashew butter for peanut butter. Chill dough for better shape retention when baking.
