Description

This Pesto, Grilled Peach & Burrata Flatbread is a vibrant summer dish featuring sweet grilled peaches, creamy burrata, and zesty pesto on a crispy flatbread base. It’s perfect as an appetizer or light meal.


Ingredients

  • 810 oz pizza dough (store-bought is perfectly fine)
  • 1/3 cup basil pesto (homemade or quality store-bought)
  • 2 ripe peaches, sliced
  • 12 heirloom tomatoes, thinly sliced
  • 46 oz burrata cheese
  • 1/2 cup fresh arugula
  • 2 tbsp fresh basil, thinly sliced
  • Olive oil, for drizzling
  • Hot honey (or regular honey for a milder finish)
  • Flaky salt and cracked black pepper, to taste

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. Roll out the pizza dough into a thin oval or rectangular shape and grill for 2–3 minutes on each side, until lightly charred and cooked through.
  3. While the dough grills, lightly oil and grill the peach slices for about 1–2 minutes per side until grill marks appear and peaches are slightly softened.
  4. Remove the flatbread and peaches from the grill and place the flatbread on a serving board.
  5. Spread the basil pesto evenly over the flatbread.
  6. Layer on the grilled peaches, sliced heirloom tomatoes, and torn burrata cheese.
  7. Top with fresh arugula and sliced basil.
  8. Drizzle with olive oil and hot honey (or regular honey).
  9. Season with flaky salt and cracked black pepper to taste.
  10. Slice and serve immediately.

Notes

  • You can use naan or pre-baked flatbread to save time instead of raw dough.
  • Try adding a sprinkle of crushed red pepper flakes for extra heat.
  • Best served fresh, but leftovers can be stored in the fridge for up to one day.
  • Make it vegetarian by ensuring the pesto does not contain Parmesan made with animal rennet.
