- 1 lb chicken breast or thighs (boneless, skinless)
- 1 cup pineapple chunks (fresh or canned, drained)
- 3 cups cooked rice (day-old rice works best)
- 3 tablespoons soy sauce (low-sodium if preferred)
- 3 cloves garlic (minced)
- 1 tablespoon ginger (fresh, grated)
- 2 stalks green onions (chopped)
- 2 eggs (lightly beaten)
- 2 tablespoons oil (sesame or neutral oil)
- Chili flakes to taste (optional, for heat)
Instructions
- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through. Remove and set aside.
- Add the remaining oil to the pan and sauté garlic and ginger until fragrant, about 1 minute.
- Push the aromatics to the side and scramble the eggs in the same pan until just set.
- Add the cooked rice and stir-fry for a few minutes until heated through and slightly crispy.
- Return the chicken to the pan along with pineapple chunks and soy sauce. Stir everything together until well combined and heated through.
- Mix in the chopped green onions and chili flakes if using. Cook for 1–2 more minutes.
- Serve hot, garnished with extra green onions if desired.
Notes
- Day-old rice gives the best texture—fresh rice may turn mushy.
- Use canned pineapple for convenience, but drain well to avoid excess moisture.
- Add bell peppers or peas for extra veggies and color.
- Adjust soy sauce and chili flakes to taste for more flavor or heat.
