Ingredients

  • 1 lb chicken breast or thighs (boneless, skinless)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 3 cups cooked rice (day-old rice works best)
  • 3 tablespoons soy sauce (low-sodium if preferred)
  • 3 cloves garlic (minced)
  • 1 tablespoon ginger (fresh, grated)
  • 2 stalks green onions (chopped)
  • 2 eggs (lightly beaten)
  • 2 tablespoons oil (sesame or neutral oil)
  • Chili flakes to taste (optional, for heat)

Instructions

  1. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through. Remove and set aside.
  2. Add the remaining oil to the pan and sauté garlic and ginger until fragrant, about 1 minute.
  3. Push the aromatics to the side and scramble the eggs in the same pan until just set.
  4. Add the cooked rice and stir-fry for a few minutes until heated through and slightly crispy.
  5. Return the chicken to the pan along with pineapple chunks and soy sauce. Stir everything together until well combined and heated through.
  6. Mix in the chopped green onions and chili flakes if using. Cook for 1–2 more minutes.
  7. Serve hot, garnished with extra green onions if desired.

Notes

  • Day-old rice gives the best texture—fresh rice may turn mushy.
  • Use canned pineapple for convenience, but drain well to avoid excess moisture.
  • Add bell peppers or peas for extra veggies and color.
  • Adjust soy sauce and chili flakes to taste for more flavor or heat.
