Description

A quick and comforting one-pan pasta dish featuring a creamy tomato sauce that is loved by both kids and adults, perfect for busy weeknight dinners.


Ingredients

  • 1216 ounces pasta of your choice (penne, rigatoni, fusilli, or spaghetti)
  • 2 cups diced tomatoes (canned or fresh)
  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 12 tablespoons olive oil

Instructions

  1. Boil the pasta in salted water until just al dente. Reserve 1/2 cup of pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
  3. Add diced tomatoes to the skillet and cook for 4–5 minutes until softened.
  4. Pour in the cream and stir. Heat until it simmers gently.
  5. Stir in parmesan and mozzarella until melted and smooth.
  6. Add Italian seasoning, salt, and pepper. Taste and adjust seasoning.
  7. Toss in the drained pasta, coat well, and add reserved pasta water if needed.
  8. Serve hot with extra cheese or fresh basil on top.

Notes

This recipe is forgiving; measurements can be adjusted and it tolerates last-minute add-ins. You can make it ahead of time and reheat with a splash of milk or cream.
