Description

A comforting and nutritious dish made with chicken thighs, pumpkin, and a blend of spices in a creamy coconut milk sauce.


Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs
  • 2 cups pumpkin, peeled and diced
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp vegetable oil
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped (for garnish)
  • Cooked rice or naan bread (for serving)

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the chopped onions and sauté until soft and translucent, about 5 minutes. Stir in the garlic and ginger, cooking for another minute until fragrant.
  2. Add the bite-sized chicken pieces to the skillet, seasoning with salt and pepper. Cook until browned on all sides, about 5-7 minutes.
  3. Sprinkle in the curry powder, cumin, coriander, and optional cayenne pepper. Cook for about 1-2 minutes to coat the chicken with spices.
  4. Add the coconut milk and chicken broth, stirring to combine. Bring to a gentle simmer to meld the flavors.
  5. Add the diced pumpkin and cover the pan. Let it simmer over low-medium heat for about 20-25 minutes until the pumpkin is tender and the chicken is cooked through.
  6. Taste the curry and adjust the seasoning with additional salt and pepper if necessary. If a thicker sauce is desired, let it simmer uncovered for an extra 5 minutes.
  7. Remove from heat, sprinkle chopped cilantro on top, and serve hot over rice or with naan bread.

Notes

For added texture, consider mixing in vegetables like carrots or bell peppers. Substitutions can include chicken breasts for thighs or butternut squash for pumpkin.
