Deliciously sweet and chewy Raspberry Coconut Bars that are gluten-free and quick to make, perfect for a snack or dessert.
Ingredients

- 1 cup almond flour
- 1/4 cup melted coconut oil
- 1/4 cup honey or maple syrup
- 1/4 tsp salt
- 1 cup fresh raspberries
- 1 cup shredded coconut
- 1 tbsp lemon juice
- Optional: 1/4 cup almond slices
- Optional: 1/2 tsp vanilla extract
- Optional: A pinch of cinnamon
- Optional: A few tablespoons of chopped dark chocolate
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a medium bowl, combine almond flour and salt.
- Add melted coconut oil and honey/maple syrup, mixing to form a dough.
- Press the dough evenly into the bottom of the prepared pan.
- Scatter fresh raspberries and shredded coconut over the dough.
- Drizzle lemon juice over the top.
- Bake for 25–30 minutes until golden brown.
- Cool fully in the pan on a wire rack before slicing into squares.
Notes
Use parchment paper for easier slicing and cleanup. Cool completely before cutting to avoid crumbling.
