    • 1 cup ricotta cheese
    • 1 tablespoon honey
    • ½ teaspoon vanilla extract

  • 4 slices of crusty bread, toasted
  • Fresh thyme or basil leaves (optional)
  • Extra honey for drizzling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix sliced strawberries with honey, balsamic vinegar, and a pinch of salt.
  3. Spread strawberries on a baking sheet lined with parchment paper and roast for 15–20 minutes until soft and syrupy.
  4. While strawberries roast, prepare the whipped ricotta by combining ricotta, honey, and vanilla extract in a food processor or blender. Blend until smooth and fluffy.
  5. Toast the slices of crusty bread until golden and crisp.
  6. Spread a generous layer of whipped ricotta on each slice of toasted bread.
  7. Top with warm roasted strawberries and a spoonful of their juices.
  8. Garnish with fresh thyme or basil leaves if using, and drizzle with extra honey before serving.

  • Use whole milk ricotta for a richer texture.
