- 3 medium sweet potatoes (skin on, scrubbed clean)
- 3 tablespoons olive oil (extra-virgin preferred)
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- Optional: ¼ cup grated Parmesan cheese or vegan alternative
- Optional: ½ cup crumbled feta cheese (or vegan feta) for topping
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the sweet potatoes into ½-inch thick rounds. Try to keep them uniform for even roasting.
- In a large bowl, toss the sweet potato slices with olive oil, rosemary, thyme, parsley, garlic powder, salt, and pepper until well coated.
- Arrange the rounds in a single layer on the prepared baking sheet. Sprinkle optional Parmesan cheese over the tops if using.
- Roast for 20–25 minutes, flipping halfway through, until golden brown and crispy at the edges.
- Remove from oven and sprinkle with crumbled feta or vegan feta if desired.
- Serve warm, garnished with extra herbs if you like.

- For an extra flavor boost, drizzle with a little balsamic glaze before serving.
