  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • Optional: ¼ cup grated Parmesan cheese or vegan alternative
  • Optional: ½ cup crumbled feta cheese (or vegan feta) for topping

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes into ½-inch thick rounds. Try to keep them uniform for even roasting.
  3. In a large bowl, toss the sweet potato slices with olive oil, rosemary, thyme, parsley, garlic powder, salt, and pepper until well coated.
  4. Arrange the rounds in a single layer on the prepared baking sheet. Sprinkle optional Parmesan cheese over the tops if using.
  5. Roast for 20–25 minutes, flipping halfway through, until golden brown and crispy at the edges.
  6. Remove from oven and sprinkle with crumbled feta or vegan feta if desired.
  7. Serve warm, garnished with extra herbs if you like.
