  • 2 celery sticks, finely chopped
  • 4 garlic cloves, crushed
  • 500g (1 lb) mushrooms, thinly sliced
  • 2 tsp fresh thyme
  • 1 rotisserie chicken, shredded
  • 6 cups stock (chicken or vegetable)
  • 1 cup cream
  • 3 cups spinach, chopped
  • Pinch of chili flakes
  • Salt and pepper, to taste
  • Optional: 1–2 diced carrots
  • Optional: Fresh parsley for garnish
  • Optional: A dash of lemon juice

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add the diced onion and chopped celery, cooking for 5–7 minutes until soft and translucent.
  2. Add the sliced mushrooms and cook for another 5–7 minutes until golden brown.
  3. Stir in the fresh thyme and crushed garlic. Cook for 1–2 minutes until aromatic.
  4. Pour in the stock and cream, stirring well. Bring the soup to a gentle simmer.
  5. Let it simmer for about 5 minutes to develop flavor.
  6. Add the shredded rotisserie chicken and chopped spinach. Simmer for an additional 5 minutes until the spinach wilts and the chicken is heated through.
  7. Season with salt, pepper, chili flakes, and lemon juice to taste.
  8. Ladle into bowls and serve warm with bread or crackers.

Notes

  • Use frozen onions, celery, or spinach to speed up prep time.
  • Canned mushrooms work in a pinch but won’t have the same texture as fresh.
  • Half-and-half can replace cream for a lighter option.
