Description

Ingredients

  • 4 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • 1/2 teaspoon crushed red pepper
  • 1 5-ounce container baby spinach, roughly chopped
  • 1 teaspoon salt, divided
  • 1 cup ricotta cheese
  • 1 pound ground beef
  • 1 onion, diced
  • 1 teaspoon Italian seasoning
  • 1 pound lasagna sheets, broken into 2-inch pieces
  • 1 25-ounce jar marinara sauce
  • 2 1/2 cups shredded low moisture mozzarella, divided
  • 1 1/2 cups freshly grated parmesan cheese, divided

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare a 12 x 17-inch baking sheet by drizzling 2 tablespoons of olive oil across the surface.
  3. In a large skillet, heat 1 tablespoon of olive oil and sauté the minced garlic and crushed red pepper for about 1 minute until fragrant.
  4. Add the chopped spinach and 1/2 teaspoon of salt, cooking for 2-3 minutes until wilted. Strain and mix with the ricotta cheese.
  5. In the same skillet, heat the remaining olive oil, add ground beef, cooking until browned. Stir in diced onion, Italian seasoning, and the rest of the salt, cooking until onions become translucent.
  6. Cook broken lasagna sheets in boiling salted water until al dente, about 7-9 minutes. Reserve 1 1/2 cups pasta water before draining.
  7. Combine the beef mixture, marinara sauce, cooked pasta, half of the mozzarella, and half of the parmesan in a large bowl. Add reserved pasta water and mix well.
  8. Spread the mixture evenly on the baking sheet, dollop ricotta spinach mixture on top, and sprinkle remaining cheeses.
  9. Bake for about 30 minutes until bubbling and lightly browned on top.
  10. Remove from the oven and let it rest for 5 minutes before slicing.

Notes

For added flavor, consider incorporating additional vegetables or cheese alternatives as per your preference. Store leftovers in an airtight container for up to 3 days.
