  • 1 cup half and half cream
  • 2 tablespoons butter
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

  • 1 pound shrimp, peeled and deveined
  • 1½ cups spinach (fresh or frozen)

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook macaroni: Boil elbow macaroni in salted water according to package directions. Drain and set aside.
  3. Sauté shrimp and garlic: In a skillet, melt 1 tablespoon of butter over medium heat. Add garlic and cook for 1 minute. Add shrimp and cook until pink and opaque, about 3–4 minutes. Set aside.
  4. Prepare sauce: In a large bowl, whisk together the egg and half and half. Stir in mozzarella, Parmesan, remaining butter (melted), cooked macaroni, spinach, and cooked shrimp.
  5. Combine and bake: Pour the mixture into the prepared baking dish. Top with extra cheese if desired. Bake for 20–25 minutes, or until bubbly and golden.
  6. Serve: Let the casserole cool for a few minutes before serving. Enjoy!
