- 115g Unsalted butter, melted and cooled slightly
- 150g Light brown sugar
- 115g Granulated sugar
- 1 Large egg, room temperature
- 1 tsp Vanilla extract
- 180g Plain flour
- 1/2 tsp Bicarbonate of soda
- 1 tsp Salt
- 200g White chocolate chips
- 40g Chopped, toasted pistachios (plus extra to sprinkle on top)
- Optional: Flaky sea salt for sprinkling on top
Instructions
- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large mixing bowl, whisk together the melted butter, light brown sugar, and granulated sugar until well combined and creamy.
- Add the egg and vanilla extract. Mix until smooth and slightly thickened.
- In a separate bowl, whisk together the plain flour, bicarbonate of soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the white chocolate chips and chopped pistachios.
- Using a cookie scoop or spoon, drop dough balls onto the prepared tray, spacing them about 2 inches apart. Sprinkle extra pistachios and flaky sea salt on top if desired.
- Bake for 10–12 minutes, or until the edges are golden but the centers are still soft.
- Allow the cookies to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Don’t overbake—the cookies will continue to cook slightly on the tray after you take them out.
- For extra flavor, toast the pistachios before mixing them in.
- The dough can be chilled for 30 minutes before baking for thicker cookies.
- These cookies store well in an airtight container for up to 5 days.
