Description

A comforting casserole full of creamy, cheesy goodness featuring layers of shredded chicken, sour cream, and cheesy tortillas or chips.


Ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup sour cream
  • 1 can (10 oz) enchilada sauce
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • Tortilla chips or corn tortillas
  • Chopped green onions for garnish
  • 1 small onion, finely chopped (optional)
  • 1 small can of diced green chiles (optional)
  • 1 cup frozen corn or black beans (optional)
  • 1/2 teaspoon ground cumin or smoked paprika (optional)
  • Cilantro, chopped (optional)
  • A squeeze of lime before serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using corn tortillas, warm them in the microwave for 20–30 seconds wrapped in a damp towel.
  3. Melt butter in a saucepan over medium heat; stir in flour, then whisk in chicken broth until smooth.
  4. Simmer sauce until slightly thickened, about 3–5 minutes.
  5. Remove from heat and stir in minced garlic and sour cream.
  6. In a greased 9×13-inch baking dish, layer chips or tortillas on the bottom.
  7. Sprinkle shredded chicken over the base, followed by sour cream sauce and cheese.
  8. Repeat layers until all ingredients are used, ending with cheese on top.
  9. Pour enchilada sauce over the top and add remaining cheese.
  10. Bake for 25-30 minutes until bubbly and golden on top.
  11. Let rest for 5–10 minutes before serving, then garnish with green onions and optional toppings.

Notes

Feel free to customize with your favorite vegetables or spice levels. Assemble in advance and refrigerate for up to 24 hours before baking.
