  • 23 fresh jalapeños, seeded and minced
  • 1 small red onion, finely chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon lime juice

Optional Add-Ons:

  • Garlic: 2 cloves, minced, for added depth.
  • Fresh herbs: Cilantro or mint for a pop of freshness.
  • Mango or mango purée: Adds tropical sweetness and complexity.

Instructions

  1. Prepare the ingredients: Dice the pineapple, mince the jalapeños, and finely chop the red onion.
  2. Combine in a saucepan: Add pineapple, jalapeños, onion, apple cider vinegar, brown sugar, ground ginger, cumin, salt, and black pepper to a medium saucepan.
  3. Cook: Bring the mixture to a simmer over medium heat. Stir occasionally and cook for 20–25 minutes until the chutney thickens and flavors meld.
  4. Add lime juice (optional): Stir in lime juice for an extra burst of brightness just before removing from heat.
  5. Cool and store: Let cool, then transfer to jars or containers. Store in the fridge for up to 2 weeks.
