- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cups fresh spinach, chopped
- 1/2 cup dried cranberries, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Toothpicks or kitchen twine
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and sauté chopped spinach for 2-3 minutes until wilted; remove from heat and let cool.
- In a mixing bowl, combine cooled spinach, cranberries, cream cheese, mozzarella, Parmesan, garlic powder, onion powder, salt, pepper, and Italian seasoning.
- Slice a pocket into the side of each chicken breast and stuff with the spinach mixture; secure with toothpicks or twine.
- Heat remaining olive oil in an oven-safe skillet and sear stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer skillet to the oven and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Allow to rest for 5 minutes before serving.
Notes
For a healthier option, substitute Greek yogurt for cream cheese and use turkey for a juicy alternative.
