Description

A comforting dish of stuffed chicken breasts filled with spinach, cranberries, and cheese, perfect for a nourishing dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cups fresh spinach, chopped
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Toothpicks or kitchen twine

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté chopped spinach for 2-3 minutes until wilted; remove from heat and let cool.
  3. In a mixing bowl, combine cooled spinach, cranberries, cream cheese, mozzarella, Parmesan, garlic powder, onion powder, salt, pepper, and Italian seasoning.
  4. Slice a pocket into the side of each chicken breast and stuff with the spinach mixture; secure with toothpicks or twine.
  5. Heat remaining olive oil in an oven-safe skillet and sear stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  6. Transfer skillet to the oven and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C).
  7. Allow to rest for 5 minutes before serving.

Notes

For a healthier option, substitute Greek yogurt for cream cheese and use turkey for a juicy alternative.
